The ornate, early Victorian building in the old city centre, now part of the newly revitalised Jewellery Quarter, was sympathetically converted to provide 66 bedrooms and suites around the central courtyard, retaining many orginal features including the magnificent sweeping staircase and granite pillars. Restaurant Bistro: Bistro which, in keeping with the design throughout the hotel, evokes a Parisian fin de siecle exuberance. Here the walls are decked with wine-related prints and pictures, fireplaces and windowsills are stacked with wine bottles, and tall windows festooned with dried hops. The dark wooden floor boards and deep hued pine tables create a classic bistro ambience, filled with natural light during the day and set to the flicker of candles and low lighting in the evenings. Bistro&wine cellar: The menu, which changes daily, provides classic and sensibly priced dishes, cooked simply using fresh local ingredients. The wine cellar offers a wide choice of carefully selected bottles at all price levels. Open daily for lunch (last orders 1.45 pm) and dinner (last orders 9.45 pm).
Bar Bubble Lounge: Bubble Bar, flamboyantly decorated in the style of Venice's Cafe Florian using sultry golden hues and with large, ornate mirrors hanging the walls. High leather seated stools line the long pewter bar that features individual built-in ice buckets (there are more than 50 types of Champagne on the list), while deep, low sofas in velvety reds and glossy leather hug the walls. Cellar Bar: The vaulted Cellar Bar, a subterranean creation that (thanks to the quirks of outside) has its own street level entrance. A contemporary space of arching cream walls and black slate floor, it is softened with soothing up-lighting while wacky paintings of lobsters lift any sense of gravity. The central bar (specialising in rum and tequila) is lined with stools, and scattered nooks and corners are furnished with sofas to offer more discrete relaxation space.
